Tour, Tasting and Lunch with Acetaia Sereni
This one-of-a-kind balsamic production and tasting experience, exclusively designed for Italy Segreta, begins in the vineyards of Acetaia Sereni, a historic producer of Balsamic Vinegar of Modena. Situated in the rolling hills of “Alta Modena”, the grapes, far from city traffic and pollution, here grow in lower, higher quality yields.
During the tour, you’ll experience an in-depth explanation of the production processes of the two types of Balsamic Vinegar of Modena–PGI and PDO:
Balsamic Vinegar of Modena PGI is produced in the grape must cooking room before resting in the aging room in large capacity barrels which create a younger and simpler product for everyday use. You will then be taken inside the traditional Acetaia, located in the attic, where the Serenis keep their rarest “food jewels”: traditional Balsamic Vinegar of Modena PDO, aged for at least 12 years, but up to more than 90 years. In this attic, more than 1,500 small fine casks are arranged in increasing rows called “batteries”.
However, this tour is not like any other balsamic vinegar experience. Italy Segreta’s guests will exclusively be given the chance to taste a few drops directly from two different barrels, taking the balsamic with a special wine lifter. This will enable you to perceive the notable differences and fragrances from one specific type of wooden barrel to another.
Afterwards, you will be taken to Acetaia Sereni’s Museum, where you will see traditional production tools as well as the world’s first bottle of Traditional Balsamic Vinegar of Modena PDO, bottled by the Sereni family and sealed with the number 0001.
The tour ends on the Sereni Terrace with 180º views into their Lambrusco and Trebbiano vineyards: you will taste six different Balsamic Vinegars, from the youngest to the oldest, followed by a four-course lunch accompanied by the family’s Lambrusco Grasparossa wines.
